    I found this caribbean chilli sauce in a farm shop down the road from me. It's really nice and I use as dipping sauce for everything. You can find the aforementioned sauce and many other varieties and chilli tips here: www.chillisgalore.co.uk

    I made spicy roast pepper soup today... YUMMY!!!!!

    Roast 3 red peppers, 3 carrots, 5 tomatoes, 2 cloves of garlic... with S+P and about a tea spoon of chilli powder... oh and some olive oil! Cook for about 40 min ish... and blend up with some veg stock!

    Amazing with some cheese on toast Very Happy

    I just cooked some really nice food and I'm in a very good mood because it turned out to be very tasty, just the right amount of everything and enough food to feed everyone with nothing left over NOM NOM NOM IT WAS YUMMY. Very Happy Very Happy Very Happy

    I made falafel (easier than I thought, although I didn't get them to stick together very well, they disintegrated a little bit) and greek salad minus the olives because I don't like olives.

    If anyone is interested I will share the recipie I used, because it's ALLLL the way downstairs and I'm not getting it unless someone actually wants to see it haha Smile

    Falafel:

    425g chickpeas rinsed and drained, 1 chopped onion, 3 chopped garlic cloves, 2 teaspoons cumin seeds, 1 teaspoon mild chilli powder, 2 tablespoons chopped mint, 3 tablespoons chopped coriander, 50g breadcrumbs all go in a blender until you get a chunky paste
    take dessertspoonfulls of the mixture and flatten into round cakes or balls
    Here the recipe says 'heat oil to 1cm depth in a frying pan and fry half the falafel for about 3 minutes turning once, until crisp and golden, drain on kitchen paper and keep warm while you cook the rest' But they didn't cook very evenly when I did that so I got rid of the oil in the pan, covered them in oil and fried them like that, worked a bit better I think

    Here's one my friend just sent me and I'm going to buy the ingridients I need once I come back from a ska gig tomorrow night and make it on thursday. Ska and tasty noms, this will be a good week, and sonic boom 6 in narberth on saturday for the weekend, excellent!

    1 pack of phyllo pastry
    250g butter (could be less if you like)
    500g of walnuts, pistachios and almonds (any nuts really)
    1 teaspoon of ground cinnamon
    200g of sugar
    250ml of water
    8 tablespoons of honey
    Dates (or apricots)
    Lemon peel or juice
    Vanilla extract

    * Break up the nuts into small pieces and toss (hehe) with cinnamon, dates and vanilla extract.
    * Mix in the sugar and a little of the butter melted.
    * Layer sheets of phyllo dough in a greased casserole dish with melted butter pasted onto each sheet. Continue until approx. half the packet is used.
    * Add most of the nut mixture and spread it evenly.
    * Continue to add layered sheets with the nuts interspersed between the sheets.
    * With a sharp knife cut the baklawa into squares or diamonds.
    * Put in the oven (180 degrees ish) and bake for 50 mins until it is golden and crisp.

    * While it is baking make the syrup.
    * Boil sugar and water until the sugar is melted.
    * Add some vanilla extract and the honey and lemon.
    * Add some more cinnamon or a cinnamon stick if you have one.
    * Simmer for 20mins ish then take off and allow to cool.

    * When the baklawa is done spoon the syrup over it and allow to set and crystalize.

    Serve hot with ice cream Smile

    I'd really like to make a good chicken broth, does anyone have an easy recipes? I cannae be chuffed with anything that requires overnight soaking of ingredients or anything, just something nice and simple please! I've tried BBC food but they're all looking affa complicated. I need a tried and tested recipe!

    I put an egg in my pasta sauce the other day, it made it nice n fluffy! its was strange but quite tastey.

    But yeah, keep the other half for the next day.... Or put it in the freezer... The freezer in my flat is jam packed with stuff! Got loads of portions of different meals. Handy as well when your having a poor week Smile

    I quite like making parmentier potatoes, basically fancy chips. All you do is chops potatos into small cubes, and shallow fry them with some garlic and herbs, eat with a chicken kiev or something, nice.

    Has any one got a really good recipe for chocolate cake?!

    I've got to make my flat mates birthday cake tomorrow.. and she's requested chocolate! I'm quite good at making muffins.. but when I make a big cake it always turns out a bit rubbish and tastes eggy! Her friends from uni are also making her a cake... so I'm determined to make mine better! I'm not competitive or anything Razz
