I made the cake! It looks amazing... I'll post up a picture soon... I don't know what it tastes like though.. that will be the true test... its chocolate sponge, with nuttella and cream in the middle, then chocolate melted on top.. with some sprinkle things and pink icing! woooo!

I'm not sure they made a cake now or not.. I forgot to ask... but its like a thing they do on their course, make a cake when ever its someone's birthday, so they are pretty shitty if they didn't do it for her!
We still haven't even cut into the cake!! The birthday girl is fast asleep in her room.. while the cake is just sat in the kitchen... oh the temptation!

That cake looks great. I would have made extra pink icing just so I could eat that. If my friends made me a cake like that I'd be made up. If my friends turned up to a gig they said they would I would be equally as made up.

Today I made chocolate fudge!! But I've eaten so much of it I feel well sick... Oh dear! And lemon sorbet... but that still hasn't frozen... I am a domestic goddess... Nigella would be proud!

I can't believe I haven't seen this before! I love baking so much - main courses I generally can't be arsed with yet.
I make chocolate brownies that induce hysteria when they are introduced to people's mouths, they are that good. I put it down to the recipe, and using Sainsbury's organic 70% fairtrade chocolate (comes in a green packet, not nearly as bitter than Lindt.
300g golden caster sugar
250g butter
250g chocolate (70 per cent cocoa solids)
3 large eggs plus 1 extra egg yolk
60g flour
60g finest quality cocoa powder
½ tsp baking powder
You will need a baking tin, about 23cm x 23cm, preferably non-stick, or a small roasting tin.
Set the oven at 180°C/Gas 4. Line the bottom of the baking tin with baking parchment.
Put the sugar and butter into the bowl of a food mixer and beat for several minutes till white and fluffy. You can do it by hand if you wish, but you need to keep going until the mixture is really soft and creamy and of an even colour and consistency.
Meanwhile, break the chocolate into pieces, set 50g of it aside and melt the rest in a bowl suspended over, but not touching, a pan of simmering water (or just bung it in the microwave for about 1 min, stir, then keep going 30 secs at a time until it's all done). As soon as the chocolate has melted remove it from the heat. Chop the remaining 50g into gravel-sized pieces.
Break the eggs into a small bowl and beat them lightly with a fork. Sift together the flour, cocoa and baking powder and mix in a pinch of salt.
With the food mixer running slowly, introduce the beaten egg to the butter/sugar mix a little at a time, speeding up in between additions. Then mix in the melted and the chopped chocolate with a large metal spoon.
Lastly, fold in the flour/cocoa mix, gently and firmly, without knocking any of the air out.
Scrape the mixture into the prepared cake tin, smooth the top and bake for 30 minutes. The top will have risen slightly and the cake will appear slightly softer in the middle than around the edges.Pierce the centre of the cake with a fork - it should come out sticky, but not with raw mixture attached to it. If it does, then return the brownie to the oven for three more minutes. It is worth remembering that it will solidify a little on cooling, so if it appears a bit wet, don't worry.

The trick is to cook them so that they come out nicely chewy round the edges and soft and moist in the middle. 30 minutes usually does the trick in my (fan) oven, but basically the fork should come out with some cooked stuff stuck to it (though sometimes melted chocolate chunks make this difficult to tell, so I test a couple of spots to make sure).
Also this recipe suggests folding the flour in, where you basically scoop the mixture up with a spoon and then drop it on top of itself. You can probs youtube it to see someone professional doing it, but this makes the consistency lighter as it keeps the air in. Oh, and never open the oven yourself or let anyone else open the oven before 25/30 minutes is up, because they will turn out like (albeit delicious) biscuits. I never forgave my brother for that hehe

My flat mate opened the oven to make cheese on toast while I was making muffins once.. and then when we were eating them she had the cheek to say they hadn't risen much! Tsk!
I've tried nigella's flourless brownies.. it just turned out like a tray nutty chocolaty goo.. it tasted amazing though!

There must be loads of recipes around somewhere. I tend to use the ones on the back of the Easy Bake Yeast packet cos a) I'm lazy and 2) they work
